Healthy Oatmeal Banana Pancakes with Cordyceps

Trust me when i say not only are these pancakes absolutely delicious but they’ve got a healthful little energy booster that is the perfect way to start the morning.

Here’s a little bit about these healthful mushrooms. Cordyceps are rich in vitamin E, K, B1, and even B12, which is said that large percentage of the population is deficient in. 

Cordyceps are most recognized for their natural energy boosting potential. Often used for people trying to get a little more out of their workouts while limiting tiredness. They are also often touted for their anti-aging benefits as well, the benefits of this might be linked to the large number of antioxidants.

The best part is, these not only are healthy and delicious they’re super easy to make. 


  • 1/2 milk of your choice (unsweetened plant milks though)
  • 1 1/2 cups old fashion rolled oats.
  • 1/4 cup coconut shreds 
  • 2 Ripe, brown spotted bananas
  • 2 teaspoons baking powder
  • 1 teaspoon natural vanilla extract
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 1/2 teaspoon cordycep mushroom powder

Put all the ingredients into the blender, always add liquid first. Blend 1-2 mins till smooth and well mixed. Let sit while heating up pan with oil. Then get on making your pancakes. Flip when bubbles start to form on top.

Serve with butter, Canadian maple syrup and fresh fruit.  I can almost guarantee this breakfast will quickly become a staple.
